​  Healthy Strawberry Cheesecake Bites

Strawberry flavoured treats are always a hit with children. However, it’s normally in the form of a sugary sweet or a snack high in sugar. Our twist on strawberry cheesecake is brilliant to give your child a tasty, healthy snack. They’re perfect all year round but the frozen element makes them perfect for Summer to replace ice lollies and ice-cream. Be sure to get your children involved and send us pictures if you make them!

Ingredients:
1 Punnet of Strawberry’s
Granola/ Cornflakes
Natural Yoghurt

Appliances and equipment needed:
Cupcake case
Baking Tray
Bowl
Spoon

Method:

Place 8 cupcake cases into a baking tray

Spoon two teaspoons of granola or cornflakes to the bottom of cupcake case until evenly spread.

Chop up strawberries, removing greenery and halving. Place 8 strawberry halves to one side. Add to a blender and blitz till pureed.

Once pureed add yoghurt until consistency is thick and light pink in colour.

Spoon puree and yoghurt mixture on top of granola or cornflakes and fill half the cupcake case, mix in with the granola/ cornflakes.

Add a strawberry half to each cupcake case on the top of mixture for decoration.

Add to freezer for 4 to 6 hours.
